CAULIFLOWER SOUP

Serves 4

INGREDIENTS

  • 1 cauliflower
  • 3 tbsp olive oil
  • 1 onion
  • 1 garlic clove
  • 800ml vegetable or chicken stock
  • 1/4 tsp ground nutmeg
  • 100ml single cream
  • 1 Sachet of Provytl 50+

Method

  1. Heat your oven to 200C.
  2. Place chopped cauliflower on a baking tray, add salt and pepper and some olive oil.
  3. Bake for 20 minutes.
  4. Peel and chop onion and garlic.
  5. Add the onion into a pan with olive oil, and cook for 5 minutes.
  6. Add the garlic, then after one minute add the roasted cauliflower, and 800ml of stock.
  7. Cook for 10 minutes, then remove from a pan and pour into a blender.
  8. Add a sachet of Provytl and blend.

To serve

For each portion, stir through some cream and season to taste.
